How to cook the REAL pad-thai like a native Chief, easy and taste as you are in Thailand

 We may have found various video demonstrating how to cook pad-thai from chiefs, I'm gonna tell you how to make the right and original guaranteed by me, native Thai :D

delish pad-thai need to taste sour from tamarind paste, sweet from coconut/palm sugar, salty from fish sauce and dried shrimp.

Ingredients:

- Pad-Thai noodles or called เส้นจันทน์ (flat noodles), also can use glass noodles or vermicelli, already soaked with water until it's soft

- tamarind sauce น้ำมะขามเปียก 1 cup

- shallot 100 g

- dried red chili (optional) 100 g

- fish sauce 3 tablespoons

- Jaggery palm sugar 3 tablespoons

- shrimp
- fried dried shrimp กุ้งแห้ง
- yellow tofu เต้าหู้เหลือง
- garlic chives กุ้ยช่าย
- sliced sweet pickled turnip ไชโป๊วหวานซอย
- eggs
- lime
- bean sprout
- crushed roasted peanut
How to cook
1. Pad thai broth - mix tamarind sauce with water, fish sauce, palm sugar, simmer until boiling
2. fried shallot and chili (seed excluded) - pungent - use low heat - be careful of burnt, then pound it together, put into Pad thai broth
3. to cook - fried yellow tofu, sliced sweet pickled turnip, and fried dried shrimp together
4. put shrimp
5. put noodles together with a little water about 5-6 teaspoons (easier to fry and make noodles soft)
6. put noodles at one side of pan, put egg in the middle, fry until eggs become thick, mix with noodles together
7. put garlic chives and fried together
--finish and ready to serve with bean sprouts, top with crushed roasted peanut---
